A JOURNEY TO ANOHER LAND
One day her great-grandmother sat her down and said to her, “Baby, you make sure that your pantry is always full, because people will remember you by your food not by your wallet.” From this day forward she would mix, whisk and flip; pouring her heart and soul into everything she cooked. Not just to prepare delicious meals but to bring happiness to everyone who would taste her creations. These words always resonated with Lisa, sending her on a journey across the sea to another land eventually arriving at the gates of the Miami Marketta with her incredible food stall; Ka Bao, serving up the most delicious Bao Buns you could ever dream of!
WHAT'S ON THE MENU?
Ka Bao have a sensational menu starring ‘The Sticky Beef’ with homemade relish, pickled cabbage and onion jam, ‘The Crunchy Chicken’ with coconut sriracha, cucumber, mint and mayo and ‘The Vegan’ with fried Halloumi, Eggplant, ginger chilli jam and avocado just to name a few! If that’s not enough to get your tastebuds watering, Ka Bao has recently brought out ‘The Bug Bao’ with fresh Bugs covered in a delectable crunchy tempura batter and truffle aioli. It is a sumptuous heavenly treat!
Not only does Lisa run Ka Bao, she also has a wholesale bakery that supplies sweet treats to different local cafes as well as a stall at the Mudgeeraba markets.
GOOD VIBES BABY!
Travelling from New Zealand to Australia as a single mother with two kids and a couple of suitcases, it has been a windy road for Lisa full of unexpected twists and turns but she has built herself an incredible life upheld by a hopeful spirit, carrying the strong values that she learned as a child. Hearing Lisa’s optimism and gratitude is truly heartwarming, “I walk into work everyday and I feel like I have won the lotto!”
SHARING STORIES AND THE LOVE
The fairytale doesn’t end there though. It is really important to Lisa not only to be happy herself but to try to help others to be happy too. Beautiful words spoken from her beloved late father inspire Lisa everyday to do what she can to help others, “Whatever you do in life, make sure you give back.”
Lisa currently sponsors several families, providing them with weekly meals to help them get by. She is also setting up a business where she will run workshops for families, teaching them how to create a week's worth of meals from scratch, maintaining a healthy diet on a shoestring budget. She also hopes to pass on some traditions from her Maori upbringing by creating a community gathering of storytelling, inviting the elders to speak to the youth, giving them a chance to tell their stories and pass on their wisdom. This was so important for her success in life and she believes it will benefit others too.
Within a few months Ka Bao has become a big part of our family here at Miami Marketta. We couldn't feel more blessed to have Lisa’s infectious energy and beautiful outlook on life.

Vegan queen Jade from The Hungry Belly is a child of many generations of marketeers. She continues her family’s legacy with her street food stall that boasts wholesome, fresh and healthy meals. She has had experience in many different types of stalls including art and crafts, fashion and our favourite, food! She grew up in a family that traveled up and down the east coast of Australia, living and breathing markets for the last 30 years. Now she is teaching her children the tricks of the trade, helping them run their own iced tea stand.
Delicious and Nutritious
The Hungry Belly’s concept is simple yet genius - vegetarian and vegan meals made with purpose-driven ingredients designed to be yummy and nutritious. After having kids Jade became inspired to create delicious and nutritious meals, researching and learning about different ingredients and how they work for our bodies. Originally starting out with Vietnamese rice paper rolls, over the years Jade has changed her menu several times, adapting to the desires of her customers – always using fresh produce that is locally sourced. “You’ve got to pivot, adapt, evolve, roll with the punches, give the customer what they need!” With a sensational range of options including fresh salads with handmade falafels and of course the famous Vegetarian nachos our locals can not get enough of The Hungry Belly!
LORD AND LADY LAMINGTON
Sweeter than the cakes themselves, are the bakers serving them up. Our most treasured duo, Liz and Mick at Reid Street Kitchen spoil the locals with their magnolious confections. Their Marketta story began 9 years ago, after many years running their dessert business between the Gold Coast and Brisbane Markets, Liz and Mick set up their stall here at the Marketta and decided that this was their home to stay. Baking everything here on site, Reid Street Kitchen makes all their products from scratch with no preservatives, additives or stabilisers. We are so lucky, our very own Lord and Lady Lamington!
HERE FOR A GOOD TIME
With two kids in tow, Liz and Mick keep themselves very busy helping out around the community doing whatever they can for the school and local organisations. On top of that Liz works a few times a week at a nearby hospital and is about to graduate from her nursing degree early next year. A spoonful of sugar helps the medicine go down indeed!
Liz has such an amazing outlook on life, she shows up every day with a beautiful smile happy to be here, not taking things too seriously. “Take the good with the bad, enjoy the ride, have fun doing what you do,” is her mantra and we are all about it!

Reid Street Kitchen prides themselves on creating a huge array of different sweet treats, still using recipes that Liz learned when she was a little girl as well as the renowned Country Women’s Association Cookbooks, “I’ve always loved to bake, it’s what we would do as kids with my two sisters and my mum.” From classic favourites including Caramel Tarts, Meringues, Tiramisu and Cheesecake to some Reid Street specialities such as Brownies loaded with salted caramel and Iced VoVo Tarts. Just how Granny used to make them!

The heart and soul of this sensational enterprise is our awe-inspiring and beloved Ana. Born and raised in El Salvador, Central America, Ana’s heritage is a melting pot of remarkable cultural backgrounds. A descendant of the Indigenous Mayans, she has drawn inspiration from her Grandmother’s traditions which are the foundations for her menu; fresh and simple fare with seasonal ingredients. From farm to table Ana has cultivated the traditions of this universally adored cuisine and made it enjoyable for everyone by accommodating any food preference, allergy or intolerance. “We have people with all kinds of preferences; vegan, vegetarian, gluten free, dairy free, allergies, whatever it is we customise the food to suit whatever they need.”

Ana’s passion for food developed through her education in health. Coming from a background in medicine, she is particularly interested in biofield therapy, which focuses on the circulation and patterns of energy that moves throughout the body. Studies have shown this can have a huge impact on the health of our bodies and minds. Ana applies this holistic approach to the preparation of the food, which she believes makes all the difference, “We infuse our food with positive vibration, channelling a positive frequency which I believe stabilises and enhances the nutrition”.

THE LOS SANTOS JOURNEY
Los Santos is one of the original markets we had here at the Marketta seven years ago. Since then, the team have dabbled in catering, kitchen takeovers as well as their restaurant collaboration in Currumbin, ‘Los Santos on the Deck’. They have been incredibly successful in all their ventures but Ana feels that the Miami Marketta is her home and appreciates the lifestyle of being able to operate here. “Everyone collaborates, the culture is amazing, and the customers are priceless. I love being able to have conversations with everyone, we have such a loyal following, we are very grateful.”

A Miami local, Nigel with over 30 years experience as a chef, has seen it all throughout his culinary career. Starting out in a fine dining restaurant at the ripe old age of 15, Nigel knew that being a chef was what he always wanted to do, “Ever since I could remember I’d be raiding the fridge and cupboards with whatever I could get my hands on to practise cooking.” By the time he was 19 he was running his own kitchen which was just the beginning of many Executive Chef positions in a variety of different establishments, including the beloved and sorely missed Hellenika on the Gold Coast. Nigel eventually went on to run his own restaurants and cafes. But when asked if he missed working and owning restaurants, he confessed, he was massively relieved when his restaurant was sold.
With great passion comes high standards and self-expectations, which is something that Nigel has struggled with throughout his career. “I always want everything I serve to be the best, and working in a restaurant with this kind of pressure I put on myself was tough. I was stressed out and angry, it was a disaster for my mental health’. Since coming to Marketta four years ago, Nigel has seen huge improvements in his life. We are so happy to have him a part of our family and we are stoked that he feels the same! “It’s a great gig, the best thing I’ve ever done.” Even through the struggles of the last 18 months of pandemic, his popularity has continued growing due to his loyal following and the support of everyone here at Miami Marketta.
