THE BRISKET BOSS! MEET NIGEL

Sugar, spice and all things nice, our resident ‘Brisket Boss’ Nigel has curated and perfected his mouth-watering brisket recipe, served up in seconds for hundreds of happy customers every week.

Over three years, Nigel worked hard to find the precise balance of spice, smoke and sweetness that makes his street food sensation such a massive hit. Smoked to perfection for 12 hours, if you get here early enough you can still smell the campfire aroma flowing through our laneway leading you to the creation of the barbecued delight.

The experience of tasting this juicy indulgence is something to revel in. Recently reviewed by a fellow punter;

“I walked straight up to him and spoke from my heart, ‘Mate, I've thought long and hard about this, and I have come to the conclusion, this here, what I just had, has got to be the best meal I’ve had all year.”

NIGEL'S CAREER
A Miami local, Nigel with over 30 years experience as a chef, has seen it all throughout his culinary career. Starting out in a fine dining restaurant at the ripe old age of 15, Nigel knew that being a chef was what he always wanted to do, “Ever since I could remember I’d be raiding the fridge and cupboards with whatever I could get my hands on to practise cooking.” By the time he was 19 he was running his own kitchen which was just the beginning of many Executive Chef positions in a variety of different establishments, including the beloved and sorely missed Hellenika on the Gold Coast. Nigel eventually went on to run his own restaurants and cafes. But when asked if he missed working and owning restaurants, he confessed, he was massively relieved when his restaurant was sold.

WHY MARKETTA
With great passion comes high standards and self-expectations, which is something that Nigel has struggled with throughout his career. “I always want everything I serve to be the best, and working in a restaurant with this kind of pressure I put on myself was tough. I was stressed out and angry, it was a disaster for my mental health’. Since coming to Marketta four years ago, Nigel has seen huge improvements in his life. We are so happy to have him a part of our family and we are stoked that he feels the same! “It’s a great gig, the best thing I’ve ever done.” Even through the struggles of the last 18 months of pandemic, his popularity has continued growing due to his loyal following and the support of everyone here at Miami Marketta.

THE MENU
Brisket Boss serves up their brisket in a crusty baguette with fresh salad and White Alabama Sauce. There are a range of different options, including the ‘Low and Slow’ which includes chutney and parmesan cheese. As well as a local favourite, ‘Reuben’ which includes sauerkraut. You can even go gluten-free with the Pear and Walnut Brisket Salad, or if pork is more your style choose the Pulled Pork Baguette.
